This peanut dipping sauce with coconut milk, honey, and cilantro is great for satays, but can also be used to dress salads.
- ½ cup peanut butter
- ¼ cup coconut milk
- 4 teaspoons minced fresh cilantro
- 2 teaspoons soy sauce
- 1 teaspoon honey
- 1 clove garlic, minced
- ¼ teaspoon cayenne pepper
- Blend peanut butter, coconut milk, cilantro, soy sauce, honey, garlic, and cayenne pepper in a blender until smooth.
