Description

Cucumbers, tomatoes, and red onion are tossed with cilantro and lime juice in this cool and refreshing salad.

Ingredients

  • 4 medium whole (2-3/5" dia) (blank)s tomatoes, cut into 8 wedges
  • 2 large cucumbers, peeled and sliced
  • 1 large red onion, chopped
  • ¼ cup chopped fresh cilantro
  • juice of 1 fresh lime
  • salt to taste

Instructions

  1. Mix the tomatoes, cucumbers, red onion, cilantro, and lime juice together in a bowl. Season with salt to serve.
