Almonds take the place of raisins in this one, and apples are also featured. Lemon juice and a big dollop of honey make this a sweet, sweet salad. Serve chilled.
- 4 medium (blank)s carrots, shredded
- 1 apple - peeled, cored and shredded
- 1 tablespoon lemon juice
- 2 tablespoons honey
- ¼ cup blanched slivered almonds
- salt and pepper to taste
- In a bowl, combine the carrots, apple, lemon juice, honey, almonds, salt and pepper. Toss and chill before serving.
