Jackfruit is cooked with barbecue sauce in the slow cooker for a wonderful vegan pulled meat substitute that will fool any meat eater.
- 1 (16 ounce) can jackfruit in brine, drained
- 1 cup barbeque sauce
- 2 tablespoons margarine (such as Earth Balance®)
- 4 hamburger buns, split
- Remove all seeds from jackfruit. Combine jackfruit and BBQ sauce in a slow cooker. Cook on High for 3 to 4 hours.
- Use a fork to shred jackfruit meat. Spread margarine on hamburger buns and place a scoop of jackfruit "meat" on top. Serve immediately
